Caprese Skewers with Aged Balsamic
January 16, 2018Every month, GBMC holds a Facebook Live cooking demonstration featuring healthy recipes from The Sleeved Chef, Michael Salamon. Michael graduated from the Culinary Institute of America and is passionate about “teaching cooking techniques and recipes to pre- and post-operative bariatric patients.” He had a type of bariatric surgery known as a sleeve gastrectomy in September 2016 and enjoys sharing his knowledge of cooking with fellow weight loss patients. Co-hosting the demonstration with him is Jana Wolff, RD, LDN, Director of Nutrition for GBMC’s Comprehensive Obesity Management Program, where Michael was treated.

Ingredients
Rosemary stems
Cherry tomatoes
Buffalo milk mozzarella balls
1 tablespoon extra virgin olive oil
1 tablespoon aged balsamic
Basil leaves to taste

Instructions
1. Purchase rosemary stems and remove the rosemary leaves
2. Place 3 cherry tomatos and 2 buffalo milk mozzarella balls onto rosemary stem skewers
3. Add basil leaves to taste
4. Drizzle 1 teaspoon of olive oil and ½ teaspoon aged balsamic onto the tomatoes and mozzarella
